WHere is an easy interpretation of a beverage featured on the seasonal menu. Designed as a party-sized premix that's loaded with the tastes of a holiday season, rendering it excellent for a holiday party. Any leftover cordial to use in brunch beverages, desserts, or for another batch of bikinis.
The Bikini Cocktail
Yields 10 servings
For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place every components inside a pan, heat until it reaches a simmer, stirring until the sugar dissolves. Next, take off the stove and leave to reach room temperature entirely. Transfer to a sealable bottle, seal keeping it chilled, it can be stored for about four weeks.
To make Batch Mix: Combine the specified liquid ingredients into one big jug, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, to ensure it's completely strained.
To serve: Measure 85ml from the batch mix to a mixing glass containing ice, and stir carefully for one minute to chill. Filter into an frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it with a light spray of mandarin oil above the glass.
